Day One: IntroductionThe first day will be an orientation of our resort and meet the hosts. Learn how to cook fish and meats from Canadian renowned chef Adrian Noordhof. In the evening, pick your own lobster at the wharf, dine on lobster and Caribou tenderloin, then listen to recitations, poems and stories while you eat scrumptious desserts, coffees, liqueurs and whiskey. If you would like please feel free to participate in the performance, please contact me well in advance for a Newfoundland poem, music, etc, that you may perform for us.
Day Two:In the morning visit Dark Tickle Jam Factory and they will provide information on local berries and their uses in cooking. Wine tasting at local liquor store. Take a hike to the St. Brendan Markings; hear tales of mermaids, pirates and marooned maidens while you eat a gourmet picnic and learn how you lunch was prepared. Boat tour to a mussel farm, icebergs, whales, abandoned resettled village, learn how the mussels are cultivated. Traditional Newfie Scoff at local Restaurant (mummers will Visit), followed by evening Bonfire (mussel boil) Sing-along.
Day Three: Table settings/cocktails
In the morning visit L'Anse aux Meadows/Norstead. Lunch at The Norseman. A tour of the beaches of L’Anse aux Meadows and information on local edible plants, berries and mushrooms visit the sea cave. A session on cooking utensils and table settings, followed by instructions on hosting a cocktail party, preparing hors d'oeuvres and stocking the bar. Play at Norstead.
Day Four: Brunch and desserts
Early morning will be spent preparing breakfast and brunch menus and identifying healthy alternatives to start the day. Visit St. Anthony hiking up hill at fishing point and have lunch at a restaurant in St. Anthony, visit the Grenfell museum, hike the Startigan Hill. Visit the grocery store to learn how to pick out fresh produce. Prepare desserts back at lodge.
Day Five: Light lunches and Entrees
In the morning learn recipes and participate in a session on preparing light lunches; soups and salads. The afternoon will be spent preparing for the evening meal (Participants will prepare a selection of gourmet entrées.), to be followed a party featuring local musicians and storytelling.
Day Six: Wrap-up
A review of the week’s program and then departure.
